A medium bodied wine in style produced from fruit grown in the Coal River Valley. Rich white stonefruits of white peach and white nectarine are complexed by the wine's wild yeast ferment in barrel, wild malo conversion and lees stirring. The 8 months of oak maturation post ferment has contributed the soft grip in the mouth. Great length and finish.
The Deviance range of wines is an exciting new vision from Alec Bailey. Whilst working under the guidance of Derwent Estate senior wine maker John Schuts, Alec identified small parcels of pristine fruit from selected vineyards around Tasmania and applied numerous natural winemaking techniques to bring the best out of these grapes. The sourced fruit was all hand picked from the premium regions of the Coal River and Tamar Valleys. Utilising wild yeast ferments, wild malolactic conversions, barrel ferments and lees stirring as the cornerstone of his philosophy, the whole range of Deviance wines is definitely a more "hands off" way of winemaking than most.
