Pinot Noir, Chardonnay, Pinot Blanc, Sauvignon Blanc, Merlot, Cabernet Sauvignon, Tempranillo and several different Muscats were hand-harvested, de-stemmed and co-fermented with wild yeats. After twelve days on skins, the wine was pressed, lightly settled and racked into a neutral French oak puncheon for a five month élevage. Unfiltered and unfined; what more could you want??
Huon Valley / Channel
Max and Siobhan met at the Gnadenberg Church on the Hill of Grace. Wine, it would seem, was in their future. They galavanted around the globe, making wine in NZ, France, Germany and Oregon. On return to their roots in Australia, they settled in Tasmania. Anim is their small, family project, named after their three daughters. It's aim is to highlight unique sites and special parcels from southern Tasmania. To do so, they are intimately involved with the vineyards they select. The wines are made in tiny volumes, primarily allocated to mailing list.The Tinderbox Vineyard is farmed solely by Max and sees the production of our core range of three classic varieties: Pinot Noir, Chardonnay and Riesling. The breathtaking Tinderbox Vineyard is perched at the entrance to the d’Entrecasteaux Channel, with sweeping views across to Bruny Island and Storm Bay.
