Widely regarded as a fabulous food wine, this dry, fruity and textural wine will go with just about anything. The variety is generally known for it's pear-infused, fruit-forward flavours and a spotlessly clean, nutty finish. The juice was fermented at a cool temperature (12-14 degs) with inoculated yeast. True to the Italian style, this wine shows incredible freshness and bright primary fruit aromas. Top notes include green pear and citrus blossom with underlying lime leaf, lemon and woody spice characters. The palate is vibrant and delicate with green pear, lemon rind and cut apple. A mouth-coating texture, attributed to extended maturation on lees, is pulled into line by the minerality and laser-like acidity. Drinks well in its youth. Not usually cellared, but should stay fresh for around 5 years.
