Estate grown from our two high density (7700-11,111 vines per hectare) blocks, planted on volcanic soils, comprising of 12 different Pinot Noir clones. The grapes were hand-picked and gently destemmed. 100% whole berry fermentation for 3 weeks before pressing and maturing on full lees for 18 months in French oak barriques (20% new). It is unfined and unfiltered to retain full expression of our vineyard. On the nose, this wine is brimming with dark red fruits, sous bois and graphite. The palate is long with intense red fruits, dark berries, cured meats and blood plums, interwoven with, fragrant cloves, fine spice and wonderful minerality. The chalky, mouth coating tannins are fine, and persistent. A powerful wine with great length and tension and weight, that can be enjoyed now, and will also reward careful cellaring.
Sinapius (sin-ay-pi-us) is located in the heart of the Pipers Brook wine region in Northern Tasmania and above the banks of the Pipers Brook. The original 2-hectare vineyard was purchased by Vaughn Dell & Linda Morice in 2005. Both of us were born and raised in Tasmania and have a deep-seated love of this beautiful island paradise. Having spent time living, studying and working in the Hunter Valley, Yarra Valley and Margaret River, we always knew that one day we would return home to what we believe is the most exciting location in the New World for growing Pinot Noir and Chardonnay; one which speaks clearly of its place and variety in its purest form. We are involved in every step of the business from hand tending the vines through to crafting the wines in our onsite winery, and ultimately assisting in distributing the finished product, through our cellar door.
