Handpicked and destemmed prior to pressing, our Riesling receives minimal handling leading into fermentation. At the desired sugar level, fermentation is ceased and a regular lees stirring program implemented. Some oak maturation also utilised. Hallmark acidity provides dramatic length and liveliness, balanced by residual sugar and a creamy texture.
