Crisp acid and a subtle hint of mint are present during the first picking. While apple and stone fruit meld with gooseberry during the second pick. Finally, sweeter tropical flavours, including passionfruit, are evident at the third picking – and they all work together brilliantly. Fermented in stainless steel, and bottled once time provides the perfect clarity; the Praxis Sauvignon blanc is understandably popular.
