A collaboration with South Australia’s award-winning Main & Cherry wines, these seasoned French oak casks held Tempranillo sourced from the Adelaide Hills, before being re-coopered and given a heavy toast and char to integrate our spirit into the wine and the wood. Lime zest and citrus blossom aromas mingle with pear liquor and a hint of gari. An elegant and balanced whisky full of tangerines and passionfruit on the palate together with herbaceous roma tomatoes. Promising depth and juicy malt finishing with notes of white jasmine, sandalwood, five-spice and ginger snaps. A blanket of Japanese sakura cherry blossoms in the springtime. Kanpai!

When three thieves from Tasmania’s whisky industry chose to explore the marriage between spirit and heavily-charred ex red wine casks, the outcome was uncertain. What they discovered years later, was a complex arrangement between oak, spirit, char, tannin and flavour profile that was both bold, elegant and unique. This laid the foundations for what would become an exploration into single malt whiskies matured in varietal specific red wine casks. Capital investment and further collaboration would be required.
