The single malt single cask is Lark’s flagship whiskey, distilled from Franklin barley and malted at the Cascade Brewery. This spirit is lightly peated (50% of malt) and resembles in flavour a Scottish Speyside or Highland whiskey. It is double distilled in locally crafted potted stills and aged in 100 litre oak casks. It is matured up to eight years in the smaller barrels which have a much larger surface area-to-volume of liquid. At 43% a/v this whisky shows off the beautiful floral and fruity notes on the nose and also at the front of the palate on tasting. The whisky then opens up across the palate with a hint of plum pudding and the rich oily malt, finishing with that delicate hint of Tasmanian Highland Peat.
