The Old Hobart Distillery’s Port Matured Whisky is aged in ex-port French-oak barrels. These hand selected barrels have been cut down to 100litre (quarter cask) capacity, which aids in producing an intense whisky of incredible character and flavour profile. The 43% port matured whiskey offers a deep gold and mildly brassy colouring, with moderately intense aromatics of butterscotch, fruit chocolates, plum pudding, rum soaked raisins and a hint of cider. The palate offers a creamy texture, sweet malt and delicately spicy. The Old Hobart Distillery’s Sherry Matured Whisky is aged in ex-sherry French-oak barrels. Also quarter cask, these barrels produce a variance to the Port Matured which will be most appreciated by the discerning palate. 43% sherry matured this whiskey is a bright brass/gold colour, smelling of chocolate, citrus, hay and Christmas cake! The palate offers cinnamon, sherry stewed stone fruits and roasted nuts on the finish.
